Greek tomato and cucumber salad with farro

The Mediterranean diet is a big trend these days, and it’s no wonder. Meals that fall into this category focus on healthy oils, fruits, vegetables, and fish. The great news is that these foods are wonderful for your overall health and for lush and enviable hair.

In an era where ancient grains are becoming new again and everyone needs to try them, the farro should be at the top of your list. Farro is rich in nutritional fiber, which is important to your overall health as it helps regulate your body, so you can absorb more valuable nutrients and minerals, many of which can be found in farro, too.

Specifically, when talking about your hair health, farro gives you proteins for strong cell growth. It also contains magnesium, iron, and zinc which are crucial to maintaining scalp and hair health. A deficit in any of these minerals can lead to hair loss.

While farro is a significant ingredient in this recipe, your hair gets another big boost from the nutritional punch that comes with the tomatoes, onions, and cucumbers. Antioxidants, folate, vitamin C, iron and more come together to give you a remarkable hair-friendly meal.

Greek tomato and cucumber salad

Ingredients:

2 cups cooked farro

⅓ cup kalamata olives, pitted and sliced

⅓ cup red onion, thinly sliced

½ pounds cherry tomatoes, halved

½ pounds small pickling cucumbers, halved lengthwise and cut into ½” slices

4 oz. feta cheese, crumbled (about ½ cup)

Dressing ingredients:

½ teaspoon grated lemon zest

3 tablespoons fresh lemon juice

3 tablespoons extra virgin olive oil

2 tablespoons red wine vinegar

2 teaspoons fresh oregano, finely chopped

½ teaspoon salt

¼ teaspoon ground black pepper

Directions:

Combine all of the dressing ingredients in a large bowl and whisk until combined. Stir in farro and then add the olives, onion, cherry tomatoes and cucumbers.

Finally, sprinkle the feta cheese on top.
