Healthy kale & egg wrap

For lunch, breakfast or even dinner on the go, this wrap is a must. It’s packed with protein, healthy vitamins and minerals and it’s delicious with a little kick. It’s also a hair-friendly treat.

If you’re worried about eggs and cholesterol, you can relax. Eggs are healthy and should be consumed in moderation, like just about every food. 

A lot of research has gone into eggs and health and many different studies have found that dietary cholesterol is not the same as the cholesterol in your blood. So, keep your egg yolks, your hair will thank you.

Eggs are a serious source of protein, which we know is vital for healthy cell growth. Since hair is a byproduct of dividing cells in the follicle, it’s evident that the protein in eggs will help feed your hair. 

In fact, eggs might even be more beneficial to hair growth than that. A series of studies in Japan found that egg yolks stimulated the growth of new human hair cells. The studies were done on mice, so it’s not solid proof that there’s something extra special about egg yolks for humans, but it’s promising.

Moving past the eggs, this recipe also calls for kale, which has become one of the trendiest foods around for health and wellness. 

Women who are going through menopause and other hormone changes might benefit the most from kale when it comes to changes in their hair. It’s been found that women should have a diet that’s rich in complex carbohydrates, vitamins C, B and A and minerals zinc, magnesium and calcium. All of which are found in kale.

There’s a lot of science to back up these ingredients, but there’s even more flavor which will make this wrap a hit.

Healthy kale & egg wrap

Ingredients:

8 eggs

½ teaspoon salt

¼ teaspoon fresh ground pepper

2 tablespoons olive oil

2 cloves garlic, minced

Pinch hot pepper flakes

2 cups thinly sliced kale, stemmed

4 large whole wheat tortillas

¼ cup hummus

1 tomato, sliced

Directions:

Whisk the eggs with salt and pepper. 

In a non-stick skillet, heat oil over medium heat. Add the garlic and hot pepper flakes and cook until fragrant. This will take approximately one minute.

Stir in the kale and cook about two to three minutes more. At this point, the kale starts to wilt.

Reduce the heat to medium-low and pour in the eggs. Cook, stirring frequently until the eggs are a creamy consistency and softly set. This will take another five to eight minutes.

On your work surface, arrange the tortillas. Spread hummus down the center of each tortilla, leaving a small border on either end so it doesn’t squish out. Top the hummus with tomatoes and the scrambled eggs. 

Fold up the filling then fold in sides and roll up tightly. Voila! Egg wraps your hair will love.
