Mashed lentil wrap with veggies

If you don’t already love lentils, it’s time to get on board and begin loving this legume. The nicely nutty flavor that’s mild enough to manipulate with spice and seasonings has serious versatility.

But it’s the hair-boosting help that lentils provide that will make you happy. Each little legume is packed with iron, folate, protein, vitamin B, potassium, magnesium, phosphorus, and fiber.

Independently, each of these vitamins and minerals is beneficial for your body and hair, put together, they’re an amazing team that gives you phenomenal hair. By supporting circulation, the body is then able to extract what it needs to survive and thrive. The better the circulation, the stronger your cells are, leading to faster cell renewal and stronger hair.

Protein is abundant in lentils and fuels your entire body with healthy building materials. You’ve no doubt heard that protein is important in building strong muscles, the same applies to build strong hair. Protein is your strength and is very important when you’re trying to grow long and lush hair.

Another benefit to call out is the way vitamin A and C work together to bind to free radicals and destroy them, reducing their ability to damage your cells. 

In addition to all of the wonderful ways lentils help your hair, this recipe includes vegetables that give your body a boost, too. The good news is, you can adjust the filling and make it suit your individual tastes.

Mashed lentil wrap with veggies

Ingredients:

1 cup lentils

4 cups low sodium vegetable broth or water

2 tablespoons tahini

1 teaspoon cumin

½ teaspoon paprika

Juice from one lemon

Salt and pepper to taste

Vegetable filling (can be changed to suit your tastes):

1 orange bell pepper

1 red bell pepper

1 yellow bell pepper

1 zucchini

1 red onion

1 tablespoon garlic powder

1 tablespoon onion powder

1 tablespoon parsley

3 tablespoons extra virgin olive oil

Salt and pepper to taste

Large wraps

A handful of spinach per wrap

1 teaspoon harissa sauce per wrap (optional)

Directions:

Prepare lentils according to the package instructions. 

Mix one cup lentils with 4 cups of broth or water and simmer gently until tender. 

While lentils are cooking, preheat oven to 350-degrees F. Cut up your veggies and spread out on a baking dish lined with parchment paper. Season the vegetables with garlic powder, onion powder, parsley, olive oil, salt, and pepper. Adjust to suit your taste preferences. Bake vegetables for 30 minutes, until roasted.

Remove cooked lentils from heat and fluff with a fork as transferring to a bowl. 

As roasted vegetables finish, take them out of the oven and let them sit until needed.

To your lentils add tahini, lemon juice, cumin, paprika, salt and pepper, and mash until all is combined well. Then take one large wrap and spread on your harissa sauce. Follow with 2 heaping tablespoons of mashed lentils, roasted vegetables and a handful of spinach. Roll and cut in half.

Repeat to use up ingredients and make multiple wraps.
