Ingredients:

2 ½ cups of water

1 cup barley

¼ cup dried apricots, chopped

¼ cup dark chocolate, chopped

¼ teaspoon salt

1 cup low-fat buttermilk

¼ cup blanched toasted hazelnuts, chopped

¼ cup honey

Directions:

Bring the water and salt to a boil over high heat. Whisk in the grains and let the pot return to a boil. Once it’s boiling with the grains, reduce heat to low. Simmer covered for 1 hour. 

Let stand for 5 minutes, then fluff with a fork before serving. 

Top with buttermilk, apricots, hazelnuts, chocolate, and honey.
