Ingredients:

3-4 ube tubers

2 eggs

½ cup sugar

½ cup canola oil

½ cup whole milk

1 teaspoon vanilla

1 ¾ cups flour

1 teaspoon ground cinnamon

½ teaspoon nutmeg

2 teaspoons baking powder

½ teaspoon salt

½ cup walnuts, chopped

Topping:

3 tablespoons brown sugar

¼ cup walnuts, chopped

Instructions:

1. In medium saucepan, bring water to a boil on med-high heat. Add yams and cook until tender, 15-20 minutes. Rinse and cool, then peel.

2. Put yams in a bowl and mash until smooth.

3. Preheat oven to 400°. Prepare muffin tins or liners.

4. In a large bowl, stir in flour, baking powder, cinnamon, nutmeg, and salt. Set aside. 

5. In a smaller bowl, whisk eggs, sugar, and oil. Once fully incorporated, add the milk and vanilla extract and whisk for an additional minute until well blended. Add yams to the mixture and continue beating. Once blended, fold in the flour mixture until just evenly combined–don’t over mix. Fold in walnuts with only a few strokes to avoid overbeating.

6. Fill muffin cups 3/4 full and sprinkle with topping. Bake until the toothpick test comes out clean–about 20-25 minutes. Transfer to a wire rack and cool.
