Sweet Potato-Beet Breakfast Hash: Food For Hair Growth
Bring on life's PLLS (pumpkins, leaves and lattes). When cooler weather hits nothing is more comforting than a nice hearty breakfast hash. Tastes my family deem for comfort include crispy, gooey, a sprinkle of sweet, and of course a big helping of hidden healthy ingredients.
We love this recipe because it saves time. Valuable time you can be using to create moments with loved ones. This is a one skillet meal. Prepare to be everyone’s favorite brunch-maker!
Hidden within this delicious meal are many foods for faster hair growth. Foods like sweet potatoes, which contain hair healthy, beta-carotene. The body converts beta-carotene into vitamin A, and vitamin A is necessary for all cell growth, including hair growth. 

Beets provide added benefit through fiber which has been shown to help to reduce cholesterol and triglycerides by increasing "good" cholesterol. 

While coconut oil's health benefits are numerous and well-known. One surprising benefits is how hydrating coconut oil can be for your hair. It's powerful effects work best mixed with a variety of other natural hair healthy ingredients.

Sweet Potato-Beet Hash

Prep: 15 Min.     Cook: 45 Min.

Total Time: 60 Min.    Feeds: 6-8 People

Ingredients:

2 tbsp coconut oil

1/2 cup water

3 large sweet potatoes, diced

2 large fresh beets, peeled and diced

1 small onion, diced

1 tbsp garlic, diced

6 eggs

2 sprigs of rosemary

1/2 tbsp dried oregano

1 tbsp smoked paprika

-Pink Himalayan salt and fresh ground pepper, to taste

Directions:

Step 1: Preheat the oven to 425. If you're using ground sausage, brown it in your largest cast iron skillet at this time. Chop the bits up really good so the edges crisp fully. 

Step 2.: Remove from heat. Mix all ingredients minus the water, eggs, cheese and sausage.

Step 3: Cook uncovered for 45 minutes. Stir every 15 minutes. Pay close attention to the pieces on the bottom so crisper). Check to see if water is needed to prevent dryness. If so pour 1/4 cup directly into the pan. 

Step 4: Mix in sausage and cheese, cook an additional 10 minutes. If you like a bold flavor, sprinkle a little extra smoked paprika on the top. Before adding eggs, check beets for desired tenderness. 

Step 5: Remove from oven and crack eggs one by one over hash. Don't worry about position, it will look Instagram worthy wherever they land. Cook an additional 5-8 minutes, depending on gooeyness desired. 

Let it sit for 10 minutes then dig in and enjoy while taking in all the taste healthy hair nutrients!
