Not familiar with farro? It’s an ancient wheat grain that’s been around for thousands of years with a lovely, chewy texture and nutty flavor. It’s a great alternative to oatmeal to get your day started, and these tasty toppings up the nutritional ante on this powerhouse food.

As far as your hair is concerned, the important nutrients that farro contains are niacin and zinc. Niacin helps your body to digest and use the foods that you eat, and is also important for skin and hair. Eating a bunch of nutrient-dense foods only does your body good if it can break them down and use them!

Farro with Bananas, Walnuts, and Dried Cranberries

4 servings

Ingredients:

5 cups water

1 cup farro

¼ teaspoon salt

8 slices banana

¼ cup chopped dried cranberries

¼ cup chopped walnuts

¼ cup honey

1 cup skim milk

Directions: 

Bring water and salt to a boil in a medium-sized pot. Stir in the farro and reduce heat to low. Simmer, stirring often, for about 40 minutes.

Top with your favorite combination of bananas, walnuts, cranberries, honey, and skim milk.

Tip!

For a little extra crunchy crispness and a deeper flavor, toast the walnuts in a dry frying pan over medium heat until fragrant. Watch carefully so they don’t burn!
